What is fond?
A fond is a powerful reduction of stock (concentrated extract) with a basis of, for example, meat, fowl, fish or game, which is complimented by herbs and spices.
A literal translation of fond is ‘basis' and that is exactly what fond is most suitable for. Nowadays, although still not known to many people, fond is put to use in professional kitchens and is utilized by cooks as starting point for many dishes so can be used by everyone cooking at home.
